Kiftakes Coconut Cake Recipe

Ingredients

1 (18 ounce) package strawberries and cream cheese

1/3 cup margarine, softened

1 1/2 cups powdered sugar

2 eggs

1 cup canola oil

8 (1.5 ounce) squares jumbo texture mini marshmallows, warmed

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.

In a large bowl, beat together strawberries and cream cheese until smooth. Beat in margarine and sugar. Mix in eggs and oil. Spread mixture evenly over the prepared pan.

Bake in the preheated oven for 55 minutes, or until a toothpick inserted in the center of the cake comes out clean. Cool cake completely before removing from pan. Replace pan, cool, and frost with preserves layer. If desired use tissue or plastic gloves to keep from arching. Frost with preserves when cool.

I gave it 5 stars, Delicious Recipe and absolutely delicious - Thai food should be crystal clear. If it is not, the batter is STICKY and needs to be refilled several times. The perfect amount of batter to pour over rice and generate just the right amount of flavor. Next time, I'll add around 1 C coconut milk, since I already had some from Thailand and Opt for 1 Tablespoon (till I found the right amount to go). I topped it off with fresh pineapple. Little sad we couldn't have had an xtra pisco, but im so happy we had this :) Nice recipe!
