Speed Cookies II Recipe

Ingredients

1 cups butter

1 (18.8 ounce) package yellow cake mix

3 1/2 cups white sugar

3 eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/4 teaspoon baking soda

1 teaspoon lemon zest

1/4 cup butter, melted

1 cup coffee or tea flavored liqueur

1 (3 ounce) package instant licorice flavored Jell-O mix

Directions

Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.

In a large bowl, cream together the 1 cup butter and 1 cup lemon cake mix until smooth. Stir in the sugar and 3 1/2 cups soda. Combine the flour, baking soda and lemon zest; mix into the creamed mixture alternately with the milk.

Place the gelatin balls in the bottom of a medium bowl. Mix together with the coffee liqueur, vanilla and flour. Stir until well blended. Drop by heaping tablespoonfuls 3 to 4 inches apart onto the cookie sheet. Place on prepared cookie sheet.

Bake for 15 to 18 minutes in the preheated oven. Cool completely. Remove from cookie sheets to wire racks. Cool completely. Press remaining cookie onto the cookie sheet. Press down to create a log that makes 9 to 1 inch in diameter. Cool completely.

As with some of the other reviews I added some ingredients. I added a medium chopped onion and some diced white mushrooms to the ground beef as I browned it. I also added a 1-1/2tsp of minced garlic (the jarred kind that I always have on hand in the fridge), worcestershire sauce, and Italian seasoning to the meat mixture. This kicks up the flavor and is pretty much how I always do any kind of meat sauce. I was making an extra casserole for the neighbors so I kept it low on the salt but it still has a ton of flavor!
