3 eggs
1 cup vegetable oil
1 cup brown sugar
2 cups milk
1 onion, chopped
1 cup frozen blueberries
1 cup white sugar
3 tablespoons brown sugar
1 teaspoon lemon zest
1 teaspoon vanilla extract
1 (12 ounce) package blueberry pancakes
Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13 inch pan.
In a medium bowl, beat eggs and oil together. Stir into the creamed mixture.
Mix brown sugar, milk, onion, blueberries, 1 cup sugar, brown sugar, lemon zest, vanilla extract and blueberry pancakes. Pour batter into prepared pan.
Bake in preheated oven for 55 minutes. Flip and continue baking for 15 to 20 minutes. Turn while still brown.
