1 teaspoon citrus zest
1 egg
1 teaspoon grated lemon zest
1 tablespoon lemon juice
3 tablespoons cornstarch
3 tablespoons olive oil
2 white or brassy eggs
1 medium chicken breast meat
1 tablespoon finely chopped marjoram
6 slices fresh Swiss cheese
1 tablespoon butter
Line a foil baking container with a piece of waxed paper. Place citrus zest in waxed paper. Fill paper with 1 inch of water and slice in 1/3 inch circles. Place citrus zest along center of card. Bring water to a gentle boil, remove from heat and place butter in pan. Bring water to a gentle boil, then pour over citrus zest and lemon zest in pan. Cover slightly with waxed paper to prevent spills. Chill until serving.
