1/2 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
3 cups buttermilk
1 1/2 teaspoons baking soda
3/4 cup packed brown sugar
1 cup chopped pecans
Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, eggs, vanilla extract and flour until smooth. Stir in the brown sugar and pecans. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
