1 tablespoon vegetable oil
1 onion, diced 4 cloves garlic, minced
2 tablespoons lemon juice
1 medium head zucchini
1 1/2 cups water
4 potatoes, peeled and sliced
1 1/2 cups dried oregano
1 1/2 teaspoons dried basil
1 1/2 cups vinegar
1 pound hamburger base
1 pound shredded Cheddar cheese
Heat oil in medium saucepan over medium heat. Add onion, garlic, lemon juice, zucchini and water, stirring constantly. Cook, stirring continually, for 2 minutes. Stir in potatoes, oregano, basil, vinegar, hamburger base, cheese, and tomatoes. Pour into heat and simmer for 1 hour. (You can leave the soup intact if you like.)
