Grandma Cake II Recipe

Ingredients

1/2 cup orange juice

3/4 cup water

2 1/2 cups self-rising flour

4 eggs

1/2 teaspoon of baking powder

3/4 cup white sugar

1/2 cup unsweetened cocoa powder

1/3 cup shortening

2 teaspoons canned orange juice

1 teaspoon vanilla extract

1 cup mini semisweet chocolate chips

10 ounces confectioners' sugar

Directions

Preheat oven to 200 degrees F (95 degrees C). Grease a 9x5 inch loaf pan. Mix 3/4 cup of orange juice, water and 2 1/2 cups self-rising flour together and set aside.

In a small bowl, combine the milk, shortening, orange juice and vanilla extract. Beat until light and fluffy. Add the remaining grated chocolate and cocoa. Mix well. Spread batter evenly into pan.

Bake for 60 to 70 minutes in the preheated oven, until center springs back when lightly tapped. Cool completely before storing away.

Extract bottom of cake and boost liquid content by 1 cup. Spread top with confectioners' sugar, then sprinkle top with chopped orange and vanilla.
