2 sweet potatoes
2 tablespoons butter
1 (15 ounce) can sweet potato puree
1 (1 ounce) square unsalted butter, chilled
3 cups all-purpose flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 (8 ounce) container sour cream
Preheat oven to 350 degrees F (175 degrees C).
Grease a 9x13 inch baking dish. Mix together sweet potatoes, butter and flour. Place butter mixture in large bowl. Stir in flour, baking powder, baking soda and salt. Stir in sour cream. Transfer to prepared dish.
Bake in preheated oven for 35 minutes. Remove from oven and let cool to room temperature. Unroll chilled dough. Stick 1 tablespoon of butter into center of each. Roll out into a 3 inch circle. Place 1/2 inch thick slices of cheese into center of each pie shell. Repeat with remaining ingredients.
