1 small onion, halved and sliced
1 large carrot, cut into 1/8 inch slices
1/4 cup olive oil
2 red bell peppers, seeded and cut into thin strips
1 large onion, cut into thin strips
2 cloves garlic, minced
2 cloves tomato paste
2 ounces dry red wine
1 (10 ounce) can crushed pizza sauce
In a medium bowl, toss onion, carrot, olive oil, red pepper and garlic. Place sliced red pepper and onion strips onto a toaster plate. Spread wine over celery, tomatoes and red pepper paste. Top with Parmesan cheese and serve.
