1 1/2 cups water
1 1/2 cups uncooked instant rice
2 (8 ounce) cans whole peeled tomatoes with juice
3 cloves garlic, minced
1 tablespoon vegetable oil
1 teaspoon dried oregano
1 teaspoon salt
1 teaspoon white sugar
Preheat the broiler.
In a medium saucepan bring water to a boil. Add rice and stir until smooth. Reduce heat to low; cover, reduce heat, and simmer 5 minutes.
Add tomatoes, garlic, oil, oregano, salt, sugar, and water to the pot with about 20 seconds of cooking. Cover, reduce heat, and simmer 8 minutes or until rice is completely cooked.
