1 cup flax seed meal
1 cup vegetable oil
1 teaspoon lemon juice
1 cup water
1 egg
1 1/2 cups milk pancake batter
Place ingredients in a large resealable plastic bag. Fold over. Store in refrigerator.
Preheat the oven to 375 degrees F (190 degrees C). Grease muffin cups or paper liners.
In a large mixing bowl, combine flax seed meal, vegetable oil, lemon juice, water, egg and milk. Stir well. Mixture should be small. Spoon batter into prepared muffin liners.
Bake in preheated oven for 20 to 25 minutes, or until a toothpick inserted into center of the muffin comes out clean. Serve warm or cold.
