3 pounds pork chops
2 tablespoons soy sauce
2 tablespoons salt
1 1/4 cups water
3/4 cup vegetable oil
3 tablespoon cornstarch
2 cups water
1 tablespoon rice vinegar
2 pounds carrots, washed
1 large onion, sliced
1 teaspoon brown sugar
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 tablespoon beaten fresh ginger root
1 1/2 teaspoons minced fresh orange zest
1/4 cup white sugar for garnish
In a medium saucepan combine soy sauce, salt, water, oil, cornstarch, 2 cups of water, vinegar, carrots, onion, brown sugar, black pepper, garlic powder, ginger and orange zest. Stir together, and simmer about 15 minutes.
Remove chops from the pan, and place in refrigerator. When the chops are cool, peel them by pressing flat, and place them onto skewers. Seal edges of each piece of meat with a fork, and place on skewers. Garnish with sugar and orange zest.
