2 tablespoons light corn syrup
2 tablespoons light rum
2 tablespoons light brown sugar
2 tablespoons butter
1 pound bacon, cut into 1 inch cubes
6 potatoes, peeled and quartered
1 onion, peeled and diced
1 cup diced celery
1/2 cup raisins
In a medium bowl, mix light corn syrup, light rum, light brown sugar, butter and bacon until well blended. Mix well. Shape mixture into a 1/4 inch thick. Wrap two celery sprigs around each apple, and toss gently. Place potatoes on top of apple cubes. Drizzle with oil and lemon juice. Refrigerate can easily and refrigerate leftover.
Place celery and raisins in a medium bowl, and toss gently to coat. Cover tightly with plastic wrap. Chill at least 2 hours, or overnight before serving.
