2 tablespoons Cantaloupe juice
1/2 tablespoon all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
3 tablespoons butter, melted
1 (8 ounce) package cream cheese, softened
10 ounces all-purpose flour tortillas, warmed
In a medium bowl, mix 1/2 cup cantaloupe juice, 1/2 cup sugar, flour, baking powder, salt, cinnamon, nutmeg and melted butter until smooth. Place in a medium saucepan; cover and bring to a boil over medium heat. Reduce heat and cook, stirring, until desired water level reaches 3/4 inch of the edges of the tortillas. Serve warm.
