1 cup butter, softened
1 cup brown sugar
1 teaspoon vanilla extract
1 1/4 teaspoons cinnamon
1 egg yolk, beaten
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
2 cups sliced almonds
1 cup brown sugar
1 cup chopped pecans
1 cup chopped pecans
Preheat the oven to 450 degrees F (230 degrees C). Grease cookie sheets.
In a large skillet, heat the butter or margarine, brown sugar, vanilla extract and cinnamon over medium heat. Remove from heat and stir in egg yolk and vanilla extract. Mix in flour, baking powder, baking soda and almonds.
Pour batter into prepared cookie sheet. Sprinkle with pecans and pecans.
Bake in preheated oven for 8 to 10 minutes, or until a toothpick inserted in the center comes out clean. Cool cookie completely on a wire rack.
