Oatmeal Bread Pudding Mix-Up Recipe

Ingredients

3/4 cup quick-cooking oatmeal

3/4 cup white sugar

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1 cup milk

2 egg whites

1 teaspoon vanilla extract

Directions

In a medium bowl, mix 1/2 cup oatmeal powder, 1/2 cup sugar and 1/2 teaspoon of salt. Stir in flour, milk and egg whites. Pour into 2 quart cake larger bowl.

In small glass or metal bowl, beat egg whites vigorously until foamy. Gradually add fruit-flavored whites, continuing to beat until stiff peaks form. (Note: To make an easy sauce, cream together 1 cup milk and 1 egg white together in a small bowl.)

Heat a lightly oiled griddle or frying pan over medium heat. Adjust heat to medium-high, add vanilla and continue to heat until oatmeal mixture boils. Remove from griddle and set aside. In small bowl, beat egg whites until stiff. Heat 2 tablespoons of milk with a wooden spoon into warm butter. Gradually add vanilla. Finally, remove from the pan with the butter.

When the batter has reduced by 1/2 cup, drop each egg white by teaspoon onto waxed paper lined sheet. cover, and allow to sit about 3 hours.

Given that it was 20 degrees in Wisconsin today, I'm sure we'll be forgetting about these things very quickly. However, I will be making these ^_^; since I roast them in the oven (steps 3 & 4), they make a very nice chip coating. Though they're made in a 9 inch springform pan, and prep are thought to be fairly accurate metrics, they're still quite a ways off. Perhaps I'll spice it up when I use REAL pecans. Still has some shortcomings, though. Caution advised before working with raw pecans. Thanks chef John for sharing!
