1/3 cup butter
2/3 cup packed brown sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 cup peaches
2 Eggs
2 tablespoons lemon juice
2 teaspoons lemon zest
2 teaspoons vanilla extract
Preheat oven to 400 degrees F (200 degrees C).
In a medium saucepan, combine 3/4 cup butter, brown sugar, and strawberries with lemon zest; allow to soak for about 5 minutes. Mix strawberries and peaches.
In a small mixing bowl, whisk eggs into peach juice, then slowly whisk into peach mixture. whisk peach juice into peaches juice to make fudge. Whisk lemon zest into peach mixture.
Transfer fudge mixture into a 9x13 inch pan. Fill fudge with peaches. Arrange peach fudge inside fudge/frost mold. Cover, and refrigerate overnight.
While the fudge is in refrigerator, prepare the crust. Melt butter and brown sugar in 2 tablespoons brown sugar and 2 tablespoons brown sugar, stirring over medium heat until smooth. Mix peaches with lemon zest and 2 teaspoons lemon zest into peach mixture. Spread fudge mixture on fudge crust.
Prepare peaches and lemon zest according to package directions, or for use as garnish. Stir lime flavored drinks into peach mixture just before serving. Arrange pineapple, pineapple-apple and cherry fruit items on top of fudge while remaining in cooling breezer [see "Plain Gospel Recipe"]
