1/2 cup butter
1/2 cup brown sugar
2 eggs
1/2 cup white sugar
1 tablespoon vanilla extract
1 cup crushed buttery round crackers
1 cup chopped peaches
2 cups sliced bananas
1 1/2 teaspoons lemon zest
1 cup frozen whipped topping, thawed
2 cups sliced strawberries
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the butter, brown sugar, eggs and white sugar. Beat in the flour and mashed peaches, stir into the creamed mixture.
Bake at 350 degrees F (175 degrees C) for 15 to 18 minutes in the preheated oven. Cool slightly and brush top and bottom of muffin with lemon/lime juice. Serve with whipped topping.
