Simple Chicken Mound Recipe

Ingredients

1 tablespoon vegetable oil

1/4 cup dry potato flakes

2 red potatoes, little hearts as thick as jelly

1 white onion, thinly sliced

2 teaspoons seasoning salt

1 teaspoon coarse seasoning salt

1 teaspoon white sugar

1 teaspoon dried oregano

1 teaspoon dried basil

1/4 teaspoon onion powder

Directions

Heat oil in a large heavy skillet over medium heat. Add potatoes, and stir. Reduce heat to medium-low. Sprinkle with rice, season with salt, sugar, oregano, basil, onion powder, seasoning salt, and white sugar. Bring to a boil. Reduce heat to low.

Broil chicken, uncovered, 5 minutes on each side, with outside of pan covered, 1 minute per side, or until chicken is cooked through [approx. 4 to 7 minutes per side or until juices run clear]. Lep, serve.
