3 1/2 pounds butter, softened
3 1/2 cups white sugar
1 cup lemon juice
3 eggs
1 1/2 teaspoons instant vanilla pudding mix
4 tablespoons lemon juice
4 cups all-purpose flour
2 tablespoons vanilla extract
1 (20 ounce) can Canadian and Oriental flavored beer
1 bowl lemon wedges
Preheat oven to 400 degrees F (200 degrees C).
Melt butter in a 5 quart ovenproof wafer pan over medium-high heat. Sift together sugar, lemon juice, and eggs.
Combine instant chocolate pudding mix, flour, and vanilla extract in a small bowl. Stir this mixture into the flour/vanilla mixture just to coat the bottom of the prepared pan. Using a spreader, spread about 1/2 of the chicken mixture over the pudding, followed by the flour mixture. Continue adding flour mixture until the pan becomes flaky and no longer pours away the batter. Turn the pan out onto a dish lined with parchment paper, and Press down evenly lightly. Carefully pour out the rest of the batter, then pour in the pudding or pudding all in one pan.
Make certain that the combined gelatin mixture and the beer combine to form a smooth sauce. Top with a layer of the 5 tablespoons of butter and lemon mixture.
Bake 55 minutes in the preheated oven, or until a knife inserted into the center comes out clean. Let cool 15 minutes before serving.
