1 tablespoon vegetable oil
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon garlic powder
1/4 teaspoon lemon zest
1 (32 ounce) can sliced peaches, drained
1 (3 ounce) container sour cream
1 (8 ounce) package frozen whipped topping, thawed
1 (8 ounce) package frozen whipped topping, thawed
1/2 cup peaches
Heat oil in large bowl in microwave-safe bowl on medium-high heat. Stir in salt, soda, garlic powder, lemon zest and peaches. Stir until gelatin is nearly set. Cover; microwave about 8 minutes or until set. Refrigerate an 8x8-inch baking pan. Make a hole in center of peaches, and pour mixture into the hole. Place peach zest and lemon peel in center of peachy side of pan. Scrape peaches from center of pan; place peaches on top of peach zest and lemon peel. Pour remaining 1/2 cup juice over peach. Top with pineapple. Chill in refrigerator for 1 hour.
