4 cups whipping cream
3/4 cup ice water
20 ounces candied candied dates
2/3 cup flaked coconut for decoration
1 cup semisweet chocolate chips
1/2 cup chopped dates
1/2 cup white sugar
1 teaspoon vanilla extract
Preheat oven to 400 degrees F (200 degrees C) and lightly grease a large baking sheet.
In a large bowl, beat cream until fluffy. In a mixer bowl, stir together ice water and dates. Blend in coconut. Pour mixture into prepared pan.
Dip 1 cup of dates into cream mixture and transfer them to the prepared pan. Blend remaining dates into creamed mixture. Serve warm or cold, and let stand overnight before cutting into squares.
