1 teaspoon lemon extract, divided
2 tablespoons butter
2 tablespoons apple cider vinegar
3 tablespoons molasses
1 (6 ounce) can crushed fruit-flavored drink mix (such as Super Punch Fruit Fruit Drink Mix)
1/2 cup water
1/2 teaspoon vanilla extract
1 teaspoon lemon extract
1 (2 ounce) package instant vanilla pudding mix
In large bowl, beat lemon extract and butter together. Beat in apple vinegar, molasses and apple juice. Beat in water; stir into lemon mixture. Fold in vanilla extract.
Unroll 2-3 layers baking sheets onto cookie sheets, using a collier or jellyroll to keep the desired shape. Bake 1 minute or until light brown and crisp. Drain on wire rack. Store in refrigerator and serve at room temperature or in bartenders glass pitchers.
