1/2 cup packed brown sugar
1 teaspoon white sugar
2 tablespoons milk
1/2 lemon, juiced
1/4 cup orange juice
1 (9 ounce) package fruit-flavored yogurt
3 tablespoons mini margarine
1 cup confectioners' sugar
2 teaspoons lemon zest
2 tablespoons lemon juice
2 teaspoons orange zest
1 (4 ounce) can lemon-lime flavored carbonated beverage
4 (1 ounce) squares lemon zest
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round cake pan or granny square baking pans.
In a large bowl, mix brown sugar, white sugar, milk, lemon juice, orange juice, yogurt, lemon and orange zest. Stir until evenly arranged. Pour batter into prepared pan or pans.
Bake in preheated oven for 25 minutes. Reduce temperature to 350 degrees F (175 degrees C), or until a paper towel inserted into the center comes out clean.
To make fruit filling: In a large bowl, beat yogurt, lemon juice, lemon juice, lemon zest, lemon juice, orange zest. Stir until smooth. Pour filling into prepared pan. Cover tightly with aluminum foil and refrigerate overnight.
Cool in pan for one hour. Remove foil and let cool completely in pan.
