1 (8 ounce) package cream cheese, softened
1/4 cup butter
1 cup white sugar
1 egg, beaten
1 tablespoon vanilla extract
3 eggs, beaten
1 teaspoon lemon zest
1 cup sliced almonds
1 (4 ounce) can frozen orange juice concentrate
1 (8 ounce) can sliced maraschino cherries
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat cream cheese and butter until combined. Cut in butter until mixture contains 8 to 10 tablespoons of lemon zest. Stir in sugar. Mix egg and lemon zest into cream cheese mixture. Gradually beat in flour. Roll into 1 inch balls and place on ungreased cookie sheets.
Bake in preheated oven for 8 minutes, or until lightly browned. Remove from oven and sprinkle with maraschino cherries. Roll in lemon zest. Cool completely. Force cookie dough into serving dish.
