Stuffed Veggie Puffs Recipe

Ingredients

2 (12 ounce) packages puff pastry for muffins

1 cup white sugar

3 eggs, beaten

1/2 teaspoon salt

1 teaspoon ground nutmeg

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1 cup margarine, melted

1 cup flaked coconut

1 (4 ounce) can crushed carrots

Directions

In a medium bowl, stir together the juice of 2 oranges and 2 lemons. Combine the icing sugar and lemon peel; stir into the mixture. Combine the salt, nutmeg, cinnamon, and nutmeg. Add to the creamed mixture, mixing to combine. Stir in the carrots, and the coconut. Pour the mixture into the prepared muffin cups.

Bake at 375 degrees F (190 degrees C) until a toothpick inserted comes out clean. Cool. Preheat oven to 400 degrees F (200 degrees C).

This recipe is really versatile. I used it for my family of four (ages 1-5). Everyone loved it, the older couple got all bent out of shape.
