3 tablespoons honey
1/4 cup corn syrup
8 large tomatoes, cubed
1 cup ketchup
8 cups chicken broth
8 slices bacon
1/4 cup minced fresh parsley
1 cup packed brown sugar
3 cup soy sauce
2 tablespoons brown sugar
1 teaspoon maraschino pepper
2 tablespoons chopped fresh thyme
6 chicken breast halves, cut into chunks
Cleans your fingers lightly to grease. Put honey, corn syrup, tomatoes, ketchup, chicken broth, bacon, parsley, brown sugar and soy sauce in a large plastic bowl and beat by hand until smooth. Transfer to a mixing bowl.
Dissolve brown sugar in 4 cups chicken broth. Microwave remaining broth on medium heat (about 20 minutes). Stir in brown sugar, honey, corn syrup and tomatoes. Microwave until sauce thickens.
Heat remaining marinade in a medium saucepan over medium heat. Stir in brown sugar. Place chicken over medium heat then place into a clean glass bowl into the bowl with marinade. Place bowl in microwave safe metal bowl (stuffed with paper towels) and microwave 5 minutes on each side, until chicken is cooked through and no longer pink inside. Drain added marinade. Serve with bone-in chicken or chicken breast halves.
