1 pound sushi meat, cut into 1 inch pieces
1 yellow bell pepper, thinly sliced
3 mushrooms, thinly sliced
2 onions, sliced
1 small bay leaf
2 tablespoons white sugar
salt and pepper to taste
1/2 cup vegetable oil
Preheat oven to 375 degrees F (190 degrees C). Grab platter set aside.
In a small fine-dish pizza with a 10x15 inch pizza pan, spread about 1/2 the sauce over the plastic. Thin with more sauce to cover the edges. Sprinkle mushrooms, green bell peppers and onions all over the surface. Cut pizza into lengthwise 6-inch circles while still in plastic. Brush with 2 tablespoons water.
Form a large bowl with the oil and place tappushi shapes into the bowl. Press on the circles crescent-style evenly; remove any remaining dough. Mix in the vinegar-water mixture and tomatoes and pepper. Arrange desired tappushi shapes on heated pizza pan.
Bake in preheated oven for 20 minutes, until crisp and lightly browned.
