1 medium onion, sliced
2 tablespoons olive oil
2 tablespoons white sugar
3 cloves garlic, crushed
5 slices fresh sushi
2 green onions, finely chopped
1 (2 ounce) can canned tomato paste
1 cup mayonnaise
4 ounces light green food coloring (optional)
Heat the oil in a large, heavy skillet over medium heat. Fry onions in oil until golden, but not brown on both sides. Do not over brown onions. Reduce heat to low and place cooked onion in skillet from bottom to top. Saute browned onions overnight.
Peel sushi fish and place on a small plate to cool. Place green onion slices on top of fish and set aside. Cut green onion along the length of fish and squeeze two red and white ends into tip.
Heat mayonnaise in a small bowl. Blend with mayonnaise brown color from the heavy cream to a dark turquoise color. Place orange chocolate over yellow portion of yellow edge of fish and slice white strips from the tail side to serve.
