1 teaspoon baking powder
1/4 teaspoon salt
1 cup margarine, softened
1 1/4 cups packed light brown sugar
1 cup breakfast cereal
1 egg, beaten
1 teaspoon vanilla extract
1 (15 ounce) can peaches, drained
1/4 cup lemon juice
1/3 cup butter
1 cup all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup white sugar
1 cup evaporated milk
1 teaspoon lemon zest
1/2 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Grease 1 muffin cups or line with paper muffin liners.
In a large bowl, cream together the margarine, brown sugar, breakfast cereal, egg, vanilla and peaches until smooth. Stir egg into peaches mixture. Beat in lemon juice and butter.
Fill muffin liners 1/2 full with batter. Spoon batter into prepared muffin cups.
Bake in preheated oven for 30 minutes, or until a toothpick inserted into center of each muffin comes out clean.
made these for the first time at the weekend, and my first attempt was decidedly mixed baggy... I ended up rounding up the bananas (only because I had 'em already) and I put the filling (except I tried to add all the dry ingredients at once, as opposed to piecemeal, and my bananas were kind of curdled), but otherwise great. used dried cranberries, and roughly chopped pecans. WILL make these again (probably every weekend), and I don't plan on changing anything I put in there--it's perfect!
