4 big tomatoes, finely chopped
2 cloves garlic, chopped
1/2 cup olive oil
salt to taste
1/3 cup white wine
3 cups chopped, sweet potatoes
Combine tomatoes, garlic, oil, salt and wine in a Dutch oven, and cook until tender but not brown, 15 minutes. Use more oil or wine if necessary.
Lower heat and pour chopped potatoes in. Cook and stir until cool. Return potatoes to heat, cover and simmer, uncovered, for 1 hour 4 minutes.
Stir in tomatoes, garlic powder, olive oil, potatoes and Parmesan cheese. Simmer, covered, for 2 hours, or just before serving.
