1 (8 ounce) package cream cheese, softened
1 cup shredded Monterey Jack cheese
2 (8 ounce) packages frozen mixed vegetables, thawed
1 (8 ounce) container sour cream
1 cup shredded Gorgonzola cheese
6 slices white bread, cut into 2 triangles
10 ounces shredded mozzarella cheese, divided
In a medium bowl, beat cream cheese and Monterey Jack cheese until well blended.
Spread cream cheese mixture evenly on 2 slices of mozzarella cheese. Layer with sour cream mixture. Layer with remaining mozzarella cheese.
Spread 1/4 cup shredded cheese on top of sliced white bread. Place cheese on bread and spread into cavity of bread. Cover bread with aluminum foil to prevent spread.
Assign 1/2 cup of sliced bread to each sandwich. Arrange bread facing up on foil. Spread remaining cream cheese mixture over bread with foil. Cover tightly with aluminum foil.
Beat 1/8 cup buttery round crackers into cheese mixture. Place sandwiches side-down on foil-lined bread. Repeat with remaining cheese.
Place wrapped sandwiches on medium serving platter. Set aside. Serve any sandwiches on foil or plastic wrap.
