Spiced Coconut Custard Pie Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1 cup white sugar

1 (3 ounce) can crushed pineapple, drained

1 (15 ounce) can chopped black currants

1 (8 ounce) can frozen lemonade concentrate

1 1/2 cups coffee-flavored soft drink mix

2 egg yolks

1 tablespoon lemon zest

2 tablespoons brandy

1 tablespoon orange zest

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together the cream cheese, sugar and pineapple. Beat in the crushed pineapple, brandy, orange and lemonade concentrate.

Pour mixture into a 9 inch springform pan or pie pan.

Bake in preheated oven for 45 minutes. Remove from oven and allow to cool.

Cool completely before filling frost with whipped cream. Frost with lemon zest. Serve with whipped cream or whipped cream frosting.
