Pina Colada Cake Recipe

Ingredients

1 (18 ounce) package angel food cake mix

3 (8 ounce) containers frozen whipped topping, thawed

1/2 cup pineapple juice

1 cup pineapple juice concentrate

1 cup orange juice concentrate

1 cup lemon juice concentrate

1 cup pineapple juice concentrate

1 cup orange juice concentrate

1/2 cup orange juice concentrate

1 cup pineapple juice concentrate

1 cup pineapple juice concentrate

1 (9 inch) prepared chocolate Gumbo snack cookie

3 eggs

1 teaspoon vanilla extract

2 (14 ounce) cans sliced pineapple (optional)

1 (3 ounce) package instant vanilla pudding mix

1 (8 ounce) package instant vanilla pudding mix

1 cup chopped pecans

1 (8 ounce) container frozen whipped topping, thawed

1 (8 ounce) package instant vanilla pudding mix

3/4 cup chopped pecans

4 bananas, peeled and sliced

1 (6 ounce) can pineapple juice concentrate

1/2 cup orange juice concentrate

1 cup pineapple juice concentrate

1/2 cup pineapple juice concentrate

1 cup sliced pecans

1 (1.5 ounce) square unsalted butter

1 (4 ounce) package instant vanilla pudding mix

1 (1.7 ounce) package instant vanilla pudding mix

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round cake pans. Mix together egg, pineapple juice concentrate, orange juice concentrate, lemon juice concentrate, pineapple juice concentrate, orange juice concentrate, lemon juice concentrate and pineapple juice concentrate. Pour mixture into the prepared pans.

Bake in preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely.

Heat 1 tablespoon of butter in a small saucepan over medium heat. Add 1/3 cup pineapple juice concentrate and stir. Return mixture to pan and stir until heated through.

In a large bowl, beat the whipped topping until light and fluffy. In a small bowl, mix together the pineapple juice concentrate, orange juice concentrate, lemon juice concentrate and pineapple juice concentrate. Stir pineapple mixture into whipped topping. Spread over cooled cake.

Layer pineapple mixture on top of chilled cake. Sprinkle sliced bananas over pineapple layer. Sprinkle whipped topping over cream cheese frosting. Sprinkle pineapple over cooled cake. Garnish with strawberries and sliced pecans.
