1 large potato, cubed
1 teaspoon dried minced onion
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon dried sage
1/2 teaspoon dried thyme
1 teaspoon dried parsley
Preheat oven to 350 degrees F (175 degrees C). Place potatoes in large pot and cover with water to cover. Bring to a boil, then reduce heat to medium-low. Cover and simmer until tender, about 20 minutes. Drain, cool and peel.
In a large bowl, mash potatoes. Stir in onion, salt, garlic powder, oregano, basil, sage, thyme, parsley, oregano mixture, salt and garlic powder mixture. Cover and simmer for 5 minutes, stirring constantly. Serve cold.
