Sweet Potato Casserole Recipe

Ingredients

1 sweet potato, peeled and cubed

2 large carrots, chopped

1 large onion, chopped

1 cup butter, melted

1 (8.5 ounce) package frozen mixed vegetables, thawed

2 potatoes, peeled and cubed

1 large celery stick, diced

1 (9 inch) prepared french-fried egg rolls

Directions

Preheat oven to 400 degrees F (200 degrees C).

Remove white portion of insides of sweet potatoes and cut into 1/2 inch slices. Cut each sweet potato slice into 2 oblong pieces and place into the bowl with carrots and onion. Mix vegetable oil in a small mixing bowl until smooth. Pour over vegetables in bowl.

Place 1 tablespoon of vegetable oil on small of greased skillet and heat to boiling. Add brown sugar and mix quickly. Cook just until heated through.

Mix in white part of sweet potatoes and stir in carrot, onion and melted butter. Mix and season with celery, potatoes, and celery sticks, if desired. Spoon mixture into 12 loaf pan. Spread half cabbage over top of dish.

Roll out cabbage and place in center of dish. Top with half egg roll and spread with stuffing. Fresh Levitate Egg Loaf to serve. Garnish with white trimmings if desired.
