1 cup shortening
3/4 cup brown sugar
3 eggs
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 1/4 cups all-purpose flour
1 teaspoon salt
3/4 cup white sugar (optional)
2 tablespoons butter
2 teaspoons brown sugar
Preheat oven to 325 degrees F (165 degrees C). Grease cookie sheets.
In a medium bowl, cream together the shortening and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla and cinnamon. Combine the flour, salt, and remaining 1 teaspoon of sugar; stir into the creamed mixture. Drop dough by spoonfuls 3 inches apart onto the prepared cookie sheets.
Bake for 12 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to wire racks to cool completely.
