1 (10 ounce) package frozen chopped cabbage
2 tablespoons olive oil
1 pound lean beef cut into 1 inch cubes
3 carrots, diced
1 onion, diced
2 cups sliced mushrooms, sliced
2 teaspoons olive oil
4 tablespoons Italian seasoning
12 (8 ounce) cans sliced mushrooms, drained and chopped
1/2 teaspoon dried rosemary
1/2 teaspoon dried sage
1/4 teaspoon dried thyme
1 1/2 teaspoons dried savory
salt to taste
ground black pepper to taste
Preheat oven to 375 degrees F (190 degrees C).
Rub cabbage and oil into a large bowl; mix the beef cubes with the carrots, onion, mushrooms, olive oil, Italian seasoning, mushrooms, oil, Italian seasoning, and sliced mushrooms. Season with the salt, pepper and Italian seasoning.
Place Cabbage mixture in a large bowl and toss with marinated vegetables and tomatoes until well coated. Pour over smashed potatoes in a 10 inch round baking dish or line with aluminum foil.
Bake uncovered at 375 degrees F (190 degrees C) for 1 hour in the preheated oven.
