6 Cuban Raisin (Uncrushed) Bread Rinds
1/2 pound baby sun-dried tomatoes
3 tablespoons butter
1 fried egg, beaten
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon ground black pepper
3 tablespoons margarine, softened
1/2 cup applesauce
Preheat oven to 450 degrees F (230 degrees C). Line bread bowl with a large dish and grease top.
In a large bowl, toss together the bread and tomato. In a medium saucepan over medium heat, melt the butter and brown the seeds. Remove from heat.
In a medium saucepan, stir together the egg, salt and paprika. Stir in ground black pepper and margarine. Bring to a boil and simmer. When sauce is almost ready, add applesauce. Reduce heat to low and simmer 12 to 15 minutes, topping off with more broth as necessary.
