1 cup vegetable oil
3 cups white sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup milk
4 tablespoons all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups chopped pecans
Preheat oven to 400 degrees F (200 degrees C). Grease and flour two 9 inch round pans.
In a large bowl, heat oil over medium heat. Stir in sugar, eggs, vanilla and flour until just blended. Mix in flour, baking powder and baking soda. Continue stirring constantly until flour is incorporated. Finally, stir milk into molasses mixture, stirring well. Pour batter into prepared pans.
Bake in preheated oven for 60 minutes. Turn off oven, but leave loosely covered over night. Return to oven for 30 to 45 minutes, or until a wooden toothpick inserted into the center of a loaf comes out clean.
Remove loaf from oven, and immediately scoop out pecans. Allow to cool on a cutting board. Cut into squares.
