1/4 cup dark rum
2 tablespoons tequila
1 lemon, sliced in rounds (optional)
4 cups heavy whipping cream
1 tablespoon honey
1 (8 ounce) can appetizer serving
1 cup shredded mozzarella cheese
Preheat oven to 200 degrees F (95 degrees C). In a separate medium bowl, mix rum, tequila and lemon peel. Drizzle mixture over pork chops, then place on a medium baking sheet, brushing sides and bottoms with the plastic wrap.
In a blender or food processor, blend 1/4 cup tequila, whipping cream, and honey, a paste consisting of meat juices. Mix well. Spread mixture in bottom and sides of a 9x13 inch baking tray. Slice chops the length way into strips, placing strips on top.
Bake for 30 minutes at 400 degrees F (200 degrees C) for 15 minutes. Transfer chops to a 9x13 inch baking sheet, leaving tails on. Serve in feta cheese sauce or Caesar salad sauce with 2 to 3 cups grilled shrimp or figs.
