Rye Cake II Recipe

Ingredients

3 1/2 cups all-purpose flour

1/2 cup white sugar

1 teaspoon baking powder

1 cup milk

3 teaspoons butter

3 eggs

1 tablespoon cardamom

1/2 teaspoon ground cinnamon

1 teaspoon vanilla extract

2 cups rye flour

1 teaspoon baking soda

1/4 teaspoon salt

1 1/3 cups white sugar

1 tablespoon vegetable oil

1 teaspoon vanilla extract

1/2 teaspoon salt/brown sugar on top

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) round pans.

In a large bowl, sift together the flour, sugar, baking powder, and milk; set aside. Beat together butter, eggs, cardamom, cinnamon, and vanilla. Beat together the flour mixture, reserved milk and milk pie filling until combined. Stir in the reserved flour mixture. Fold in the rye flour, baking soda and salt.

Pour batter into prepared pans. Bake in preheated oven for 35 minutes, or until a toothpick inserted into the center of each pan comes out clean. Let cool in pans for 2 hours before removing to wire racks to cool completely.
