1 quart oil for frying
4 slices fresh bread, torn
1 1/2 cups white sugar
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon dried maraschino cherry rind
1/4 cup orange juice
1/4 cup lemon juice
1/4 cup lemon zest
1 egg, beaten
Preheat oven to 375 degrees F (190 degrees C). Spray a large skillet with 1 tablespoon butter or margarine.
Place bread slices in pan and brush with remaining butter. Fry bread on both sides, turning once. Fry bread until golden brown and remove from pan. Drain on paper towels.
Beat sugar, flour and baking soda in small bowl. Stir in orange juice, lemon juice and lemon zest. Mix flour mixture with baking soda, cinnamon and maraschino cherry rind and mix; pour into prepared pan.
Place bread slice in center of pan. Fry side up, turning over every 15 minutes. Do not brown. Drain on paper towels.
Bake in preheated oven for 45 minutes, stirring once, until golden brown.
