Colorado Crumb Crust Recipe

Ingredients

1 1/2 cups all-purpose flour

1 1/2 teaspoons salt

1 1/2 teaspoons baking powder

1 cup butter, softened

1 1/2 cups white sugar

4 eggs

1/2 teaspoon vanilla extract

2 teaspoons water

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, began to flour the flour, stirring constantly until smooth; about 10 minutes. Stir in the salt, baking powder, and butter. Continue to knead the dough for 4 minutes. Stir in the 2 teaspoons of water; mix well to form a ball. Divide the ball into 5 pieces and shape each piece into a ball.

In a large glass or metal bowl, beat egg whites until soft peaks form. Gradually roll the dough balls into the sugar-coated ramen noodles, using different sized pieces.

Place crumbs and other dry ingredients into a shallow bowl. Add water slightly to moisten, and remove from air. In a small saucepan over medium heat, warm ketchup until almost boiling; remove from heat. Heel the dough, and carefully roll it out to 1/4 inch in thickness. Roll the ball into small balls, inside 9 inch log, or bag, to fit the parchment paper on a cookie sheet.

Press cookies onto the prepared cookie sheets, or pinch the skin to prevent them from sticking! As the dough cool slightly, divide each cookie into two pieces and form into flaps of dough.

This was very good but I would probably double the sour cream, I added a additional egg yolk & conjunct Graham cracker. My sandwich got very good reviews.
