1 cup shortening
1 cup white sugar
1 cup packed light brown sugar
3 tablespoons lemon juice
3/4 teaspoon orange zest
1 teaspoon vanilla extract
1 (8 ounce) can crushed pineapple juice concentrate
In a large bowl, mix shortening, white sugar, brown sugar, lemon juice, orange zest, orange zest, vanilla extract and crumble pina colada fillers. Spread evenly into that container. When serving, sprinkle slices of sliced pineapple over fruit in container. Cover and refrigerate for six hours, or until firm. Remove fruit from freezer, and place fruit in a glass container. Chill in refrigerator for a day or so, possibly overnight, until completely chilled. Garnish with fresh limes. Refrigerate leftover fruit. Serve.
