Ellen's Dessert Pudding III Recipe

Ingredients

1 cup packed light brown sugar

4 eggs

1 tablespoon vanilla extract

1 1/2 cups milk

1 teaspoon vanilla extract

1 teaspoon almond extract

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1/2 cup shortening for frying

1 cup white sugar for frosting

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch pan.

In a large saucepan, combine brown sugar, eggs, vanilla, milk, vanilla extract, almond extract, shortening, 1 cup white sugar and brown sugar mixture. Cook over medium heat until bubbles form around edges.

Remove pan from heat, drain liquid and pour into prepared pan.

Bake in preheated oven for 55 to 60 minutes. Immediately remove from oven and cool completely, removing pan from oven. Frost with whipped cream to keep frosting moist. Drizzle with chocolate glaze if desired.

I made these quick and easy for my family and they loved it. The dough directions are a bit confusing so I kind of winged it. I doubled the recipe so I could have leftovers for tomorrow night but didn't have room in the fridge so I just left it at 2 eggs and stirred every egg to thicken the dough. Cooked at 425 for about 8 minutes with the foil on and then coated with a thin layer of sugar. Took about 25 minutes to brown. The finished product looked very appealing and cooked well. The consistency was fantastic! Very sticky and wonderful texture. I could eat these forever.
