1 cup butter
1 cup brown sugar
2 eggs
4 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons almond extract
3 cups rolled oats
1 cup cooked, diced almonds
1/4 cup chopped walnuts
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream butter, brown sugar, eggs and vanilla until smooth. Stir in flour, baking powder, baking soda and salt. Beat in almonds, oats, almonds and walnuts. Drop by rounded spoonfuls onto the prepared cookie sheet.
Bake for 8 to 10 minutes in the preheated oven, until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
