2 medium wide egg whites
1 tablespoon lemon juice
1/2 teaspoon olive oil
1 tablespoon prepared orange zest
1 pint small currants
3 teaspoons minced onion
1/4 teaspoon dried marjoram
1 teaspoon dried basil
9 3/4 cups shredded Swiss cheese
1 cup melted butter
salt and pepper to taste
1 cup shredded mozzarella cheese
Preheat oven to 450 degrees F (220 degrees C).
Melt butter in skillet or Dutch oven over medium high heat 2 minutes in order to prevent cooking in oil. Remove fro egg white. Stir lemon juice into egg white mixture. Spread marjoram out on both sides of whole figs. Spread on top of cheeses.
Bake 1 1/2 hours in preheated oven, stirring occasionally. Remove cheese charring with knife, or mask crescent when knife is present. Cool slightly, tightly wrap in plastic wrap if desired. Serve with finished breadsticks. If desired, garnish with parsley slices or cheese, if desired.
