6 skinless, boneless chicken breast halves
1 onion, diced
1 cup butter
1 cup all-purpose flour
1 teaspoon salt
3 cups milk
1 pint large Italian sausage, diced
1/4 cup all-purpose flour
2 tablespoons hot paprika
4 pounds shredded mozzarella cheese
1 1/2 cups shredded Parmesan cheese
Place chicken and onion in a saucepan, drain then press all remnants into a separate large bowl. brown in partially in microwave; drain.
In a large skillet, brown butter over medium heat. Remove from heat; stir in flour, salt and milk. Mix well, then stir in sausage, cheese and remaining flour. Cook over medium hot heat, stirring, until mixture thickens. Adjust seasoning if necessary; serve.
