1 1/2 pounds apples - peeled, cored, and chopped
1 1/2 cups packed brown sugar
3 cups white sugar
2 1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 egg
1/2 cup cider vinegar
1 dram vanilla wafers
1 teaspoon lemon zest
1/2 cup cider sugar
1 (11 ounce) package mini marshmallows
Preheat oven to 300 degrees F (150 degrees C).
Place apples in a medium saucepan with enough water to cover by covering with aluminum foil. Bring to a full boil, and boil 3 minutes. Remove from heat, cool, peel and slice.
Remove fruit from water and stem. Cut into 1 inch squares. Reserve 1/4 cup of fruit for garnish.
In a small bowl, mix brown sugar, 3 cups white sugar, cinnamon, nutmeg, and vanilla.
In a large bowl, combine 1 1 stack of underripe apples, lemon juice, vinegar, lemon zest, lemon herb, 2 cups cider vinegar, and 2 of the lemon wafer halves. Stir to combine. Add the cinnamon, lemon herb and apple mixture. Pour the apple mixture into the bottom of a 9x13 inch baking dish. Gently mix in the marshmallows.
Bake in preheated oven until apples are tender and sugar is bubbly, about 40 minutes.
